(ROCKWALL, TX – Oct. 9, 2019) October is probably my favorite month of the year. It’s my birthday month, it’s the opening of the State Fair of Texas, the beginning of fall, cool weather and the start of soup season. I’m not really sure if soup season is a “thing”…But we can make it one.
I found this recipe from Food 52, a really great website with tons of fun cookware and recipes. I love lasagna and I love soup so this seemed like a no brainer. I adapted it a little to reflect my recipe for Tate Farms beef sausage and it turned out so good. Have you ever made ground sausage from ground beef? Is that a silly question? I hope not! Because I never had.
A couple of months ago I stumbled on an old pamphlet from the National Cattleman’s Beef Association. One of those tri-fold fliers with recipes in it, encouraging you to use beef for more than tacos and hamburgers. One of the recipes called for beef sausage and then gave their direction on how to make it on your own. Evan and I played around with it some and came up with an original recipe for Tate Farms beef sausage. Even as much as I cook and write about food and read cookbooks, I am constantly still learning little things I can do in the kitchen.
