Special guest… the Headless Horseman

Rockwall, TX (October 13, 2025) – The Rose Table creator Katie-Rose Watson hosted a Sleepy Hollow-themed party this fall and released the episode on her popular Facebook Page and YouTube Channel yesterday. The party was inspired by the original Washington Irving story, published in 1820 but set in the 1790s. The guests wore period-appropriate outfits for the costume party and feasted on real menu items described in the story. Most notably, Watson’s own Friesian horse Wendy and trainer Karen Singer made a special appearance as the Headless Horseman.“I’ve been dreaming about this moment since the day I met Wendy seventeen years ago!” gushed Watson about her beloved horse’s Headless Horseman debut. “Huge thank you to the whole team at Shenanigan Stables for making my Sleepy Hollow vision a reality! This episode is the horse girl Halloween party of my dreams.”

The episode’s intro was filmed at the idyllic Meadow Lane Equestrian Center in Rockwall before moving to Watson’s dining room. The food blogger, who partnered with Kroger DFW on the menu, served an old-fashioned feast fit for the Van Tassels autumn harvest party: Herb Roasted Chicken with potatoes and shallots, an Apple & Pear Salad with walnuts and goat cheese, Maple Roasted Brussels Sprouts, bread with preserves, Rustic Apple CakeMaple Glazed and Cinnamon Sugar Doughnuts, fresh fruit with cinnamon whipped cream, Pumpkin Pie, and Autumn Harvest Punch.The Rose Table has amassed a following of over 300,000 fans across social media and has had over 40,000,000 views, thanks in part to The Rose Table’s magical themed parties.
